Whilst on the Surface, is there a way to enter a Dive Simulation Mode to make the OSTC simulate what it would look like if it were actually diving and the Diving Menus and button pushes?

Yes, since V1.23 there is an Stand-alone simulator (Which is getting more features in the next version, e.g. Tissue data will be restored after the simulation)

Menu -> More -> Simulator
